A Beyond Clean approach

Cleaning activities must not simply achieve visible cleanliness but effectively remove microbiological hazards

Sanitation Strategy

Contaminants such as food residues, fats, oils, moisture, and processing debris provide an ideal environment for the growth and proliferation of bacteria, mould, and other microorganisms. If not effectively controlled, these hazards present a significant risk to product safety, integrity, and regulatory compliance.

In accordance with BRCGS Global Standard for Food Safety requirements and HACCP principles, the sanitation programme adopts a ‘Beyond Clean’ approach. This ensures that cleaning activities do not simply achieve visible cleanliness but effectively remove microbiological hazards and prevent cross-contamination.

    This approach includes:

    • The systematic removal of gross debris and organic matter from all food contact and non-food contact surfaces
    • The application of validated cleaning and disinfection procedures appropriate to the identified hazards
    • The use of approved cleaning chemicals at correct concentrations and contact times
    • Cleaning frequencies determined through risk assessment and HACCP analysis
    • Clear segregation between high-risk, high-care, and low-risk areas where applicable
    • Verification of cleaning effectiveness through visual inspection and, where required, microbiological or ATP testing
    • Maintenance of documented cleaning schedules, records, and verification checks in compliance with BRCGS clause requirements

    A good advisory practice cleaning regime would include:

    1. Safety and preparation
    • Put on PPE: safety boots (non-slip), gloves, eye protection; add apron/face shield if using strong chemicals.
    • Check the area status: confirm line is stopped (if required), products covered/removed, and that you’re allowed to wet-clean.
    1. Dry removal (always do this first)
    • Sweep or vacuum to remove loose debris (powders, packaging, solids).
    • Scrape stuck-on solids (use a plastic scraper to avoid gouging resin).
    1. Pre-rinse (if your site allows rinsing)
    • Rinse with warm water to soften soils. Use low pressure (high pressure can drive contamination into joints and edges).
    1. Apply detergent (choose the right one)
    • Select a food-safe, resin-compatible detergent.
    • Dilute exactly to label/SDS in a marked container (never “extra strong”).
    • Apply detergent evenly using a mop, foam gun, or auto-scrubber solution feed.

    IMPORTANT - Allow contact time (typically 5–10 minutes; follow the product label).

    • Keep it wet—do not let it dry on the floor.
    1. Mechanical scrubbing (this does the real work)
    • Scrub the floor: Use an auto-scrubber with the correct pad/brush or a deck brush for edges, coving, corners, under equipment
    1. Remove dirty solution
    • Pick up slurry immediately using an auto-scrubber vacuum, or a wet vac / squeegee to drain
    • Do not allow dirty water to sit—especially around joints and coving.
    1. Rinse
    • Rinse with clean water to remove detergent residues.
